A touch of Europe

A touch of Europe – these cookies come straight from France! You grow the lavender in your own garden. It not only looks beautiful, but in summer the flowers keep flies at bay. You’ll only need 2 -3 little buds for a batch of cookies.

Makes 36 – 48, depending on the size

You’ll need

½ cup soft butter
½ cup plus 1 tablespoon soft brown sugar
1 egg, lightly beaten
1 tablespoon chopped lavender flowers
1½ cup cake flour
1 teaspoon baking powder

This is how you do it

Cream the butter and sugar. Add the egg and lavender flowers. Sift the cake flour and baking powder into the mixture and mix into a stiff dough. Roll the dough into little balls, flatten slightly and place slightly apart on a baking sheet lined with baking paper. Bake for 10 – 12 minutes in a preheated oven of 180̊C°

Leave for 5 minutes on the baking sheet before taking it out onto a wire rack to cool down completely.

PS: If you can’t find lavender, you can use fresh rosemary instead.
