This recipe for my one dish Lemon and Thyme Chicken Bake does not feature ginger, but it certainly delivers on taste.
3 onions, peeled and quartered
3 garlic cloves, roughly chopped
4 – 6 medium potatoes with skin on, scrubbed and quartered
8 chicken pieces
6 fresh thyme sprigs
salt and freshly ground black pepper
zest of 1 lemon
3 tablespoons olive oil
½ cup dry white wine (or more stock if you prefer not to use wine)
½ cup chicken stock
This is how you do it
Arrange the onion, garlic and potatoes in an oven roasting pan. Place the chicken pieces on top and scatter the thymes sprigs over. Season with zest and salt and pepper. Drizzle with olive oil. Pour the wine and stock in the pan. Bake in a preheated oven of 200ºC for 45 – 50 minutes or until the chicken and potatoes are cooked.
