Cottage cheese and honey ice cream

If you’re not really into sweet things, this lip-smacking ice cream is for you. It takes hardly any effort or time to make this recipe.

I’m not particularly fond of ice cream, but have been known to succumb to the craving at the weirdest times. On the coldest winter’s day I usually dig into some soft serve or creamy gelato. But this ice cream I can eat any day – it is not quite as sweet and it reminds me of frozen cheese cake. The best thing about this recipe is that you do not need an ice cream maker.

Serves 4 – 6

What you’ll need

2 cups cream
1 x 250 g tub smooth cottage cheese
½ cup honey
1 teaspoon vanilla extract
¼ teaspoon cinnamon

This is how you do it

Pour 1¾ cups of the cream into the bowl and beat with an electric mixer until it forms medium peaks. Whisk the remaining ¼ cup of cream with the cottage cheese, honey, vanilla and cinnamon until you have a smooth mixture. Gently fold the whipped cream into the cottage cheese mixture, mixing just until fully combined. Pour the mixture into a plastic container with a lid. Freeze for 3 to 4 hours or until set. Leave the ice cream for 15 minutes outside the freezer to soften before scooping and serving.
HINT: If you want a slightly sweeter ice cream, you can use cream cheese instead of cottage cheese.
